HOW TO ORDER LIKE AN ITALIAN – Be a Better Traveler

So you’re traveling to Italy on a food and wine tour, envisioning all that wonderful Italian food: spaghetti and meatballs, chicken parmesan, fettuccine Alfredo. But now it’s day three, and you still cannot find “spaghetti and meatballs” offered on any menu.

And what is this? Risotto or pappardelle con porcini (Toscana)? Or sarde in saor (Venezia)? The unfamiliar dishes make selecting the right wine pairing even more stressful.

In Italy, we take our food seriously. Be an informed traveler and do not try to improve upon our pairings. Our regional plates work with our regional wines. RULE #1: When ordering wine, do not mix the regions unless you really know your grapes.

A common mistake I have witnessed: You are finally in Chianti Classico, an area in Tuscany known for the Sangiovese grape. It’s time to order your wine. You choose something “safe” to impress your tablemates, and you order an expensive Barolo.

You have just insulted the region, the town, and your waiter. Barolo comes from Piemonte, and the grape is Nebbiolo, which they do not use in Tuscany. Why not order OUR wine, which pairs perfectly with our food?

The lesson: Honor the region you’re dining in by choosing local wines. Not only will you avoid a cultural faux pas, but you’ll also discover why centuries of tradition have perfected these pairings.

RULE #2: Always choose the seasonal option or special regional dishes.

Italian cuisine celebrates what’s fresh and local. Here are some seasonal and regional specialties to look for:

1) Fall in Mountain Regions (Val d’Orcia, Siena, Chianti, Firenze, Monte Amiata in Tuscany) – Porcini Time

  • Pappardelle with porcini mushrooms
  • Wine pairing: Rosso di Montalcino

2) Fall in Tuscany – Schiacciata con l’uva

  • Found during grape harvest in Chianti, this sweet focaccia is studded with fresh grapes and sugar
  • Serve with: Caffè or Vin Santo

3) Roma – Puntarelle alla Romana

  • Available February to April, dressed with anchovies and garlic—order as a side dish
  • Wine pairing: Frascati or Orvieto

4) Liguria – Trofie al Pesto (Summer)

  • Offered when the basil is at its freshest, served with string beans and occasionally potatoes
  • Wine pairing: Vermentino or Pigato from Liguria

5) Bologna/Emilia-Romagna – Tortellini in Brodo (Winter)

  • Typical during winter season and the Christmas holidays
  • Serve with: Lambrusco di Sorbara

6) Bologna – Crescentine (Year-Round)

  • Mini fried dough pockets filled with cured meats like salumi and formaggi—a year-round staple
  • Also served with: Lambrusco
